i made up a mushroom bisque recipe the other night, and i’ve had enough interest in it that i’m posting the recipe here. enjoy!
ingredients: mushrooms (baby bella), green onions, veggie broth, sour cream, half and half.
make it work: chop up the mushrooms and green onions, saute them in a large pot. after about 10-15 minutes (the mushrooms should be pretty soft and cooking down), add some veggie broth (maybe 2 or 3 cups) and let that simmer for 15-20 minutes. take about 3/4 of the soup and toss it into a food processor. puree it, then add it back to the pot. add about 1/2 cup half and half and 1/2 cup sour cream. mix well, then serve.
